Peaches contain caffeic acid, which is an antioxidant specifically found in high levels in peach nutrition. It protects the body from the dangerous carcinogenic fungi aflatoxin that is often found in certain types of food like tree nuts, peanuts, peanut butter and corn. More than any other antioxidant tested, caffeic acid destroyed the production of aflatoxin, reducing it by 95 percent.
