Winter Slaw With A Blueberry Vinaigrette

Ingredients
  • 1⁄2 cup nudefruit frozen blueberries 1 tbsp maple syrup
  • 1/2 head red cabbage, finely shaved 4 leaves of kale, finely shaved
  • 2 granny smith apples, finely shaved 1 cup blueberries
  • 3 sprigs of fresh mint, chopped
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • zest from 1 lime
  • 2 tbsp lime juice
  • Blueberry Vinaigrette
  • 1/2 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tsp cinnamon
  • pinch of salt
  • pinch of pepper
  • 2 tbsp lime juice
Instructions

Winter Slaw:

  1. Mix the shaved red cabbage, kale, apples all together in a large bowl.
  2. Add the blueberries, mint, sunflower seeds, pumpkin seeds, lime juice and lime zest to the bowl.
  3. Lightly toss.

Blueberry Vinaigrette:

  1. In a blender, add the olive oil, apple cider vinegar, frozen blueberries, maple syrup,cinnamon, salt, pepper and lime juice.
  2. Blend until smooth.
  3. To make your dressing thinner and more “pourable” add another teaspoon of olive oil and blend. Repeat until dressing is your ideal consistency.
  4. Drizzle your desired amount of vinaigrette onto the winter slaw and lightly toss.
