Ingredients
- 1⁄2 cup nudefruit frozen blueberries 1 tbsp maple syrup
- 1/2 head red cabbage, finely shaved 4 leaves of kale, finely shaved
- 2 granny smith apples, finely shaved 1 cup blueberries
- 3 sprigs of fresh mint, chopped
- 1/4 cup sunflower seeds
- 1/4 cup pumpkin seeds
- zest from 1 lime
- 2 tbsp lime juice
- Blueberry Vinaigrette
- 1/2 cup olive oil
- 2 tbsp apple cider vinegar
- 1 tsp cinnamon
- pinch of salt
- pinch of pepper
- 2 tbsp lime juice
Instructions
Winter Slaw:
- Mix the shaved red cabbage, kale, apples all together in a large bowl.
- Add the blueberries, mint, sunflower seeds, pumpkin seeds, lime juice and lime zest to the bowl.
- Lightly toss.
Blueberry Vinaigrette:
- In a blender, add the olive oil, apple cider vinegar, frozen blueberries, maple syrup,cinnamon, salt, pepper and lime juice.
- Blend until smooth.
- To make your dressing thinner and more “pourable” add another teaspoon of olive oil and blend. Repeat until dressing is your ideal consistency.
- Drizzle your desired amount of vinaigrette onto the winter slaw and lightly toss.
