Ingredients
1 1/2 cups all purpose flour
1/2 cup granulated sugar
1 1/2 tsp baking powder
1/3 cup butter or margarine at room temperature
2 egg whites
1 tsp vanilla
Filing :
1/2 cup granulated sugar
4 tbsp all-purpose flour
1 bag nudefruit scrumptious antioxidant blend, frozen
2 tsp icing sugar for dusting (optional)
Instructions
- Preheat oven to 180°C (350°F) and lightly grease a 11 inch flan dish.
- Make the base – in a food processor or bowl, combine flour, sugar, baking powder, butter, egg whites and vanilla, mix well. Press into the bottom of flan dish.
- Prepare the filing. In a bowl combine the sugar and the flour. Toss in the nudefruit antioxidant blend (you may want to quarter any very large strawberries) Spoon over the base and bake for 60 – 70 minutes until the top is bubbling. Let cool, if desired dust the top with icing sugar.
- Serve warm or cold with lightly whipped cream or ice cream.
- This recipe would work equally well with any of the other nudefruit varieties, lovable sour cherries, wild & crazy blueberries, 4 very bare berries, ravishing raspberries or blushing strawberries.
